This is Episode #9 and a comprehensive look at getting your offset smoker ready for a cook. I think getting a good base for a cook is an essential process for success on a true stick burner. I took a new Primitive Pits Babe that just been tallow seasoned and took the firebox from cold (it is 25 degrees the entire vid) to ready for meat. NOTE: With the smoker never being burned before and tallow seasoned, the smoke seen on the video is referenced to as "good" and "lookin good." I am referring to the airflow, but the wind was not cooperating. The color of the smoke will or should become way more clear as the tallow burns off and the smoker gets naturally seasoned. Just about every sporting good store or home improvement retailer sells BBQ smokers, grills and backyard cooking accessories these days. Most have multiple blue tooth temperature devices to attach to your cooking vessel, which monitor cook temps via a smart device. However, if you don't have a probe port on your grill or smoker, you're stuck with placing the wires under the door, which is not the best idea when cooking BBQ. Since adding BBQ tech to my grill and BBQ life in 2012, I realized that the probe ports that allow you to access the wall of your cooking vessel are really hard to find. The word "legend" is not in my everyday vocabulary, nevertheless Roy Perez is one of the last old school BBQ legends on earth. For 30-plus years he has been the pit-master, or fire maker at Kreuz (pronounced Krites) Market. As a matter of fact (before this video was released), if you Google pit-master, his image is the first to pop up. I just love the guy and he inspired me to dive deeper into Texas BBQ. Kreuz is one of my favorite stops. The dim lit room, the hollow noises ringing out of an old, block pit house is equivalent to my Picasso. I sat down with the legend as he granted me a rare interview. Many in the BBQ community would love to see Roy Perez inducted into the BBQ Hall of Fame in 2019. He is truly a special character and I hope you enjoy this short interview. On Episode 3, I go the extra mile by seasoning a 250 gallon Primitive Pits BBQ smoker with beef tallow. A fellow BBQ nerd in Austin, Tx put me on this process eight or nine years ago and I noticed it definitely was an improvement from the PAM spray oil I was using. I did not go into the importance of cleaning your BBQ smoker regularly, especially if you haven't used it in a while. Bacteria and mold will grow quickly and no one wants a mold infused brisket! I clean my smokers after a cook and again before I cook, unless I am cooking back to back within a week. So, I may season my cookers several times a year. Episode #1 kicks off with BBQ Competition 101 with John Hale. I've never been into BBQ competitions and struggled to understand competitions for years. Maybe it's because to me, BBQ isn't a contest, sport or competition. To me it's more of a spiritual pilgrimage into our past, but also wood fire cooking brings out better food. We'll leave that for another days content. So, first step is to dive into the overall scope of BBQ competitions to see if we can just figure them out and let's see if you or myself become more interested in them.
